A Real Pancake

I've tried making many gluten free pancakes over the years, with limited success. Many of them stuck to the pan or fell apart. The flavor was often too "grainy" and dense, not soft like a "real" pancake. Not only are these pancakes easy to flip, but they are light and fluffy. Most importantly, I don't experience any pain after eating them. Cooking tip: make the pancakes about the size of your hand. Wait for the bubbles to appear, like a normal pancake, before flipping!
